Ingredients:
- 2 cups (180g) Old Fashioned Rolled Oats
- 1 tsp Baking Powder
- 1 tsp Ground Cinnamon
- 0.5 tsp Sea Salt
- 0.5 cup (50g) Chopped Walnuts
- 2 large Overripe Bananas, mashed
- 1 large Egg
- 1.5 cups (355ml) Unsweetened Almond Milk
- 1 tsp Pure Vanilla Extract
- 1 tbsp Melted Coconut Oil
- 1.5 cups (190g) Fresh or Frozen Blueberries
- 1 large Banana, thinly sliced
Instructions:
- Preheat your oven to 375°F (190°C) and grease an 8x8-inch square baking dish with coconut oil or butter.
- In a large mixing bowl, mash the two overripe bananas until they reach a smooth, liquid consistency. Whisk in the egg, almond milk, vanilla extract, and melted coconut oil until well combined.
- Add the dry ingredients to the wet mixture: rolled oats, baking powder, ground cinnamon, sea salt, and chopped walnuts. Stir until the oats are fully hydrated.
- Gently fold in the 1.5 cups of blueberries using a silicone spatula to avoid crushing the fruit.
- Pour the mixture into the prepared baking dish. Top the mixture with the remaining thinly sliced banana coins in an even layer.
- Bake for 35 minutes or until the oatmeal is set in the center and the edges are lightly golden brown. Allow to cool for 5-10 minutes before slicing into 6 generous squares.
