Ingredients:

  • 2 cups (180g) Old Fashioned Rolled Oats
  • 1 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 0.5 tsp Sea Salt
  • 0.5 cup (50g) Chopped Walnuts
  • 2 large Overripe Bananas, mashed
  • 1 large Egg
  • 1.5 cups (355ml) Unsweetened Almond Milk
  • 1 tsp Pure Vanilla Extract
  • 1 tbsp Melted Coconut Oil
  • 1.5 cups (190g) Fresh or Frozen Blueberries
  • 1 large Banana, thinly sliced

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease an 8x8-inch square baking dish with coconut oil or butter.
  2. In a large mixing bowl, mash the two overripe bananas until they reach a smooth, liquid consistency. Whisk in the egg, almond milk, vanilla extract, and melted coconut oil until well combined.
  3. Add the dry ingredients to the wet mixture: rolled oats, baking powder, ground cinnamon, sea salt, and chopped walnuts. Stir until the oats are fully hydrated.
  4. Gently fold in the 1.5 cups of blueberries using a silicone spatula to avoid crushing the fruit.
  5. Pour the mixture into the prepared baking dish. Top the mixture with the remaining thinly sliced banana coins in an even layer.
  6. Bake for 35 minutes or until the oatmeal is set in the center and the edges are lightly golden brown. Allow to cool for 5-10 minutes before slicing into 6 generous squares.
