Ingredients:

  • 3/4 cup (170g) unsalted butter
  • 3/4 cup (150g) packed light brown sugar
  • 2 tbsp (30ml) bourbon
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1/2 cup (80g) toffee bits
  • 1/2 cup (90g) dark chocolate chips

Instructions:

  1. Place butter in a small saucepan over medium heat. Melt and cook, whisking occasionally, until the foam subsides and brown specks form at the bottom and the butter smells nutty.
  2. Remove butter from heat and let cool for 5 minutes. Whisk in brown sugar until combined.
  3. Stir in the bourbon, egg, and vanilla extract. Mix vigorously until the batter is smooth, creamy, and glossy.
  4. Sift in the flour, baking soda, and salt. Use a spatula to fold the dry ingredients in just until no streaks of flour remain.
  5. Gently fold in the toffee bits and dark chocolate chips.
  6. Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper or silicone mats.
  7. Bake at 350°F (175°C) for 10-12 minutes, or until the edges are set and golden but the centers still look slightly soft.
