Ingredients:
- 3/4 cup (170g) unsalted butter
- 3/4 cup (150g) packed light brown sugar
- 2 tbsp (30ml) bourbon
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1/2 cup (80g) toffee bits
- 1/2 cup (90g) dark chocolate chips
Instructions:
- Place butter in a small saucepan over medium heat. Melt and cook, whisking occasionally, until the foam subsides and brown specks form at the bottom and the butter smells nutty.
- Remove butter from heat and let cool for 5 minutes. Whisk in brown sugar until combined.
- Stir in the bourbon, egg, and vanilla extract. Mix vigorously until the batter is smooth, creamy, and glossy.
- Sift in the flour, baking soda, and salt. Use a spatula to fold the dry ingredients in just until no streaks of flour remain.
- Gently fold in the toffee bits and dark chocolate chips.
- Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper or silicone mats.
- Bake at 350°F (175°C) for 10-12 minutes, or until the edges are set and golden but the centers still look slightly soft.
