Ingredients:

  • 1 cup unsalted butter (2 sticks)
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 1 large egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Zest of 1 medium grapefruit
  • 1 cup white chocolate chips

Instructions:

  1. In a medium saucepan over medium heat, melt the butter.
  2. Continue cooking, stirring frequently until it turns golden brown and has a nutty aroma (about 5–7 minutes). Be careful not to burn it.
  3. Remove from heat and let cool slightly while you prepare other ingredients.
  4. In a mixing bowl, combine the browned butter with granulated sugar and brown sugar until smooth.
  5. Add in the egg, egg yolk, and vanilla extract; mix until fully incorporated.
  6. In another bowl, whisk together flour, baking soda, salt, and grapefruit zest.
  7. Gradually add dry ingredients to wet ingredients; stir until just combined.
  8. Fold in white chocolate chips evenly throughout the dough.
  9. Cover dough with plastic wrap or transfer to an airtight container.
  10. Chill in the refrigerator for at least 30 minutes (up to overnight).
  11. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  12. Scoop tablespoons of chilled dough onto prepared baking sheets about two inches apart.
  13. Bake for approximately 10–12 minutes or until edges are lightly golden but centers remain soft.
  14. Allow cookies to cool on baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
