Ingredients:
- 1 cup unsalted butter (2 sticks)
- 3/4 cup granulated sugar
- 3/4 cup packed light brown sugar
- 1 large egg + 1 egg yolk
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Zest of 1 medium grapefruit
- 1 cup white chocolate chips
Instructions:
- In a medium saucepan over medium heat, melt the butter.
- Continue cooking, stirring frequently until it turns golden brown and has a nutty aroma (about 5–7 minutes). Be careful not to burn it.
- Remove from heat and let cool slightly while you prepare other ingredients.
- In a mixing bowl, combine the browned butter with granulated sugar and brown sugar until smooth.
- Add in the egg, egg yolk, and vanilla extract; mix until fully incorporated.
- In another bowl, whisk together flour, baking soda, salt, and grapefruit zest.
- Gradually add dry ingredients to wet ingredients; stir until just combined.
- Fold in white chocolate chips evenly throughout the dough.
- Cover dough with plastic wrap or transfer to an airtight container.
- Chill in the refrigerator for at least 30 minutes (up to overnight).
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Scoop tablespoons of chilled dough onto prepared baking sheets about two inches apart.
- Bake for approximately 10–12 minutes or until edges are lightly golden but centers remain soft.
- Allow cookies to cool on baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
