Ingredients:
- 1 cup (225g) salted butter
- 1/2 tsp (3g) flaky sea salt
- 3/4 cup (150g) packed light brown sugar
- 1/4 cup (50g) granulated sugar
- 2 large eggs
- 1 tbsp (15ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) pumpkin pie spice
Instructions:
- Place the butter in a heavy-bottomed saucepan over medium heat. Swirl regularly until the butter foams, crackles, and the milk solids turn a deep mahogany brown. Remove from heat immediately and let cool for 15 minutes.
- In a large bowl, cream together the cooled brown butter, light brown sugar, and granulated sugar using a mixer.
- Beat in the eggs one at a time, then stir in the vanilla extract until the batter is smooth and slightly pale.
- In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and pumpkin pie spice.
- Gradually fold the dry ingredients into the wet mixture until just combined; do not overmix.
- Scoop the dough into balls, place on a tray, and chill in the refrigerator for at least 2 hours.
- Preheat oven to 350°F (175°C). Place chilled dough balls on parchment-lined baking sheets and bake for 12 minutes.
- Remove from oven and sprinkle with flaky sea salt before transferring to a wire cooling rack.
