Ingredients:

  • 1 cup (226 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 3/4 cup (165 g) packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175 g) butterscotch chips
  • 1 cup (100 g) pretzel pieces

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in eggs, one at a time, followed by vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in butterscotch chips and pretzel pieces with a spatula.
  7. Cover the dough and refrigerate for 30 minutes.
  8. Use a cookie scoop to place dough onto prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until edges are golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
