Ingredients:
- 1 cup (226 g) unsalted butter, softened
- 3/4 cup (150 g) granulated sugar
- 3/4 cup (165 g) packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (175 g) butterscotch chips
- 1 cup (100 g) pretzel pieces
Instructions:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in eggs, one at a time, followed by vanilla extract until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Gently fold in butterscotch chips and pretzel pieces with a spatula.
- Cover the dough and refrigerate for 30 minutes.
- Use a cookie scoop to place dough onto prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until edges are golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
