Ingredients:

  • 1 pint (250g) cherry tomatoes
  • 8 oz (225g) mini mozzarella pearls
  • 12 large (10g) fresh basil leaves
  • 4 oz (115g) Genoa salami, thinly sliced
  • 1/4 cup (60ml) balsamic glaze
  • 1 tbsp (15ml) extra-virgin olive oil
  • 1/2 tsp (3g) flaky sea salt
  • 1/4 tsp (1g) freshly cracked black pepper

Instructions:

  1. Wash the cherry tomatoes and dry them thoroughly with paper towels to ensure the glaze adheres.
  2. Fold the fresh basil leaves in half or roll them tightly.
  3. Assemble the skewers by piercing a cherry tomato, followed by a folded basil leaf, a piece of folded salami, and topping with a mozzarella pearl.
  4. Arrange the completed skewers in a circular pattern on a large platter.
  5. Drizzle extra-virgin olive oil evenly over the skewers, followed by a zig-zag drizzle of balsamic glaze.
  6. Finish by sprinkling with flaky sea salt and freshly cracked black pepper.
