Ingredients:
- 3 cups (375g) All-purpose flour
- 1 tsp (5g) Baking soda
- ½ tsp (3g) Salt
- 2 tsp (10g) Ground cinnamon
- ½ cup (115g) Unsalted butter, softened
- 1 cup (200g) Granulated sugar
- 2 Large eggs, room temperature
- 1 tsp (5ml) Vanilla extract
- 1 cup (240ml) Sour cream
- 2 cups (300g) Granny Smith apples, peeled and finely diced
- 2 tbsp (16g) All-purpose flour
- ½ cup (115g) Unsalted butter
- 1 cup (200g) Brown sugar, packed
- ¼ cup (60ml) Heavy cream
- ½ tsp (3g) Salt
Instructions:
- Thoroughly grease every nook and cranny of the Bundt pan with butter or non-stick spray, then dust with flour, tapping out the excess.
- In a small bowl, toss the diced apples with 2 tbsp of flour until coated and set aside.
- Whisk together the 3 cups of flour, baking soda, salt, and cinnamon in a medium bowl.
- Beat the softened butter and granulated sugar on medium-high until pale and fluffy (about 3 minutes).
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Alternately add the dry ingredients and the sour cream to the butter mixture, mixing on low speed just until combined.
- Gently fold in the floured apples using a spatula.
- Pour the thick batter into the prepared pan and bake at 350°F (175°C) for 60–65 minutes.
- Test for doneness by inserting a toothpick into the center of the cake.
- Allow the cake to cool in the pan briefly before unmolding onto a wire rack.
- Simmer the remaining unsalted butter, brown sugar, heavy cream, and salt together in a saucepan until thickened, then drizzle the glaze over the cooled cake.
