Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1.5 cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 0.5 cup (120ml) apple cider, reduced to 0.25 cup (60ml)
  • 3 cups (375g) all-purpose flour
  • 1 tbsp (8g) baking powder
  • 1 tsp (2g) salt
  • 2 tsp (5g) ground cinnamon
  • 0.5 tsp (1g) ground nutmeg
  • 2 cups (300g) Granny Smith apples, peeled and finely diced

Instructions:

  1. Place the apple cider in a small saucepan over medium heat. Simmer until it has reduced by half (from 0.5 cup to 0.25 cup). Let it cool completely.
  2. Dice the Granny Smith apples into very small, uniform cubes (about 0.25 inch). Toss them with a pinch of cinnamon to prevent browning.
  3. Beat the softened butter and granulated sugar on medium-high until pale and fluffy (about 3 minutes).
  4. Add eggs one at a time, beating well after each addition, then stir in the vanilla and the cooled cider reduction.
  5. In a separate bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet, mixing on low until just combined.
