Ingredients:

  • 8 ounces (225g) sharp cheddar cheese, grated
  • 4 ounces (115g) cream cheese, softened
  • 1/2 cup (120ml) ale (such as a pale ale or amber ale)
  • 1 medium apple (such as Honeycrisp or Granny Smith), peeled, cored, and diced
  • 1/4 cup (40g) finely chopped red onion
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease an oven-safe skillet or baking dish.
  2. In a medium bowl, whisk together the flour, ale, mustard, garlic powder, smoked paprika, salt, and pepper.
  3. Add both grated cheddar cheese and cream cheese. Stir until cheese is coated with the flour, ale, and spice mixture.
  4. Fold in the diced apple and red onion. Ensure even distribution.
  5. Spread the mixture evenly in the prepared skillet or dish. Bake for 20-25 minutes, or until golden brown and bubbly.
  6. Remove from oven and let cool slightly. Garnish with chopped chives or parsley (if using). Serve immediately.
