Ingredients:
- 1 tbsp olive oil (15 ml)
- 4 pork sausages, removed from casings (approx 200g/7oz)
- 1/2 medium onion, finely chopped (approx 75g)
- 1 clove garlic, minced (approx 3g)
- 1 (14.5 oz/411g) can diced tomatoes, undrained
- 1 (15 oz/425g) can baked beans
- 1/2 tsp dried oregano
- Pinch of red pepper flakes (optional)
- Salt and pepper to taste
- 4 slices of bread, toasted
- 1/2 cup shredded cheddar cheese (approx 50g)
Instructions:
- Heat olive oil in a skillet over medium heat. Crumble sausage meat into the skillet and cook, breaking it up with a spoon, until browned and cooked through.
- Add chopped onion and minced garlic to the skillet with the sausage. Sauté until softened, about 3-4 minutes.
- Stir in diced tomatoes, baked beans, oregano, and red pepper flakes (if using). Season with salt and pepper to taste. Bring to a simmer and cook for 10 minutes, stirring occasionally, allowing the flavors to meld.
- Transfer the sausage and bean mixture to an oven-safe dish or skillet. Top with shredded cheddar cheese.
- Bake in a preheated oven at 375°F (190°C) for 5-7 minutes, or until the cheese is melted and bubbly. Alternatively, broil for 1-2 minutes, watching carefully to prevent burning.
- Serve immediately over toasted bread.
