Ingredients:
- 2¾ cups all-purpose flour
- 1 packet instant yeast
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup warm water
- 2 tablespoons olive oil
- 1 cup shredded mozzarella cheese
- ½ cup crumbled feta cheese
- ¾ cup pitted green olives, chopped
- 1 teaspoon dried oregano
- Freshly ground black pepper, to taste
Instructions:
- In a mixing bowl, combine the warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.
- Add flour, salt, and olive oil. Mix until a dough starts to form.
- Knead the dough on a floured surface for about 8-10 minutes until smooth.
- Place the dough in a lightly oiled bowl and cover with a kitchen towel. Let it rise in a warm place until it doubles in size, about 1 hour.
- In a separate bowl, combine mozzarella, feta, chopped olives, oregano, and black pepper. Mix well.
- Punch down the risen dough and roll it out into a rectangle (about ½ inch thick).
- Spread the cheese and olive mixture evenly over the dough.
- Starting from one long edge, roll the dough tightly into a log. Pinch seam closed.
- Cut the log into 12 equal pieces and place them cut-side up on a lined baking sheet.
- Cover the rolls loosely with a clean kitchen towel and let rise for 30 minutes.
- Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes until golden brown.
