Ingredients:

  • 2¾ cups all-purpose flour
  • 1 packet instant yeast
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese
  • ¾ cup pitted green olives, chopped
  • 1 teaspoon dried oregano
  • Freshly ground black pepper, to taste

Instructions:

  1. In a mixing bowl, combine the warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.
  2. Add flour, salt, and olive oil. Mix until a dough starts to form.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth.
  4. Place the dough in a lightly oiled bowl and cover with a kitchen towel. Let it rise in a warm place until it doubles in size, about 1 hour.
  5. In a separate bowl, combine mozzarella, feta, chopped olives, oregano, and black pepper. Mix well.
  6. Punch down the risen dough and roll it out into a rectangle (about ½ inch thick).
  7. Spread the cheese and olive mixture evenly over the dough.
  8. Starting from one long edge, roll the dough tightly into a log. Pinch seam closed.
  9. Cut the log into 12 equal pieces and place them cut-side up on a lined baking sheet.
  10. Cover the rolls loosely with a clean kitchen towel and let rise for 30 minutes.
  11. Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes until golden brown.
