Ingredients:

  • 1 (21 ounce) can cherry pie filling (600g)
  • 1 (8 ounce) package cream cheese, softened (225g)
  • ½ cup (1 stick) unsalted butter, melted (115g)
  • 1 (15.25 ounce) box yellow cake mix (432g)
  • ½ cup (1 stick) unsalted butter, melted (115g)

Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  2. Spread cherry pie filling evenly over the bottom of the prepared baking dish.
  3. In a mixing bowl, beat the softened cream cheese until smooth. Drizzle the melted butter over the cream cheese and stir. Drop dollops of the cream cheese mixture over the cherry filling.
  4. Sprinkle the dry cake mix evenly over the cream cheese and cherry layers, making sure to cover everything.
  5. Drizzle the remaining melted butter evenly over the cake mix layer.
  6. Bake in preheated oven for 35-40 minutes, or until the top is golden brown and the cherry filling is bubbly. Check for doneness with a toothpick inserted into the centre – it should come out mostly clean.
  7. Let cool slightly before serving.
