Ingredients:

  • 2 cups whole milk
  • 1/4 cup unsweetened cocoa powder
  • 2 tbsp granulated sugar
  • 1/8 tsp fine sea salt
  • 2 tbsp maraschino cherry juice
  • 1/2 tsp pure vanilla extract
  • 4 oz chocolate covered cherries
  • 1/2 cup heavy whipping cream
  • 2 maraschino cherries

Instructions:

  1. Combine dry ingredients. Whisk the cocoa powder, sugar, and salt together in your saucepan. Note: This ensures the salt and sugar are evenly distributed.
  2. Create the paste. Slowly pour in 1/4 cup of the whole milk. Whisk constantly until a thick, smooth mahogany colored paste forms with no visible lumps.
  3. Add the remaining milk. Gradually pour in the rest of the milk.
  4. Heat gently. Turn the heat to medium low and stir frequently. Cook for about 10 minutes until the mixture is steaming and small bubbles form around the edges. Do not let it reach a full boil, or you'll risk scorching the milk.
  5. Infuse the flavor. Remove the pan from the heat. Stir in the maraschino cherry juice and vanilla extract. Note: Adding these at the end preserves the bright cherry aroma.
  6. Portion the drink. Carefully pour the liquid into two heat resistant mugs.
  7. Whip the cream. Beat the heavy whipping cream until soft peaks form.
  8. Garnish and serve. Top each mug with a generous dollop of whipped cream, a few chocolate covered cherries, and one maraschino cherry.
