Ingredients:

  • 2 cups rolled oats
  • 1 cup puffed rice cereal
  • ½ cup unsalted almonds, chopped
  • ½ cup honey or maple syrup
  • ½ cup almond butter or peanut butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line the baking dish with parchment paper, leaving an overhang for easy removal.
  3. In a large mixing bowl, mix the rolled oats, puffed rice cereal, chopped almonds, cinnamon, and salt.
  4. In a separate bowl, whisk together honey (or maple syrup), almond butter (or peanut butter), and vanilla extract until smooth.
  5. Pour the wet mixture over the dry mixture and stir until fully combined.
  6. Fold in chocolate chips until evenly distributed.
  7. Transfer the mixture to the lined baking dish and press down firmly to create an even layer.
  8. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
  9. Cool completely in the baking dish for at least 30 minutes before slicing into bars.
