Ingredients:
- 2 cups rolled oats
- 1 cup puffed rice cereal
- ½ cup unsalted almonds, chopped
- ½ cup honey or maple syrup
- ½ cup almond butter or peanut butter
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C).
- Line the baking dish with parchment paper, leaving an overhang for easy removal.
- In a large mixing bowl, mix the rolled oats, puffed rice cereal, chopped almonds, cinnamon, and salt.
- In a separate bowl, whisk together honey (or maple syrup), almond butter (or peanut butter), and vanilla extract until smooth.
- Pour the wet mixture over the dry mixture and stir until fully combined.
- Fold in chocolate chips until evenly distributed.
- Transfer the mixture to the lined baking dish and press down firmly to create an even layer.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
- Cool completely in the baking dish for at least 30 minutes before slicing into bars.
