Ingredients:
- 1 cup (2 sticks/227g) unsalted butter, softened
- ¾ cup (150g) packed light brown sugar
- ½ cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups (192g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 cups (240g) old-fashioned rolled oats
- 1 cup (170g) semi-sweet chocolate chips
- Optional: Sea salt flakes, for sprinkling
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour (or line with parchment paper) a 9x13 inch baking pan.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
- Stir in the old-fashioned rolled oats until evenly distributed.
- Press half of the oatmeal mixture firmly into the prepared baking pan to form the base.
- Sprinkle the chocolate chips evenly over the base layer.
- Crumble the remaining oatmeal mixture evenly over the chocolate chips.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set (a toothpick inserted near the center should come out with a few moist crumbs).
- Let cool completely in the pan before cutting into bars. Sprinkle with sea salt flakes (optional).
