Ingredients:

  • 1 cup (2 sticks/227g) unsalted butter, softened
  • ¾ cup (150g) packed light brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups (192g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups (240g) old-fashioned rolled oats
  • 1 cup (170g) semi-sweet chocolate chips
  • Optional: Sea salt flakes, for sprinkling

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour (or line with parchment paper) a 9x13 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
  6. Stir in the old-fashioned rolled oats until evenly distributed.
  7. Press half of the oatmeal mixture firmly into the prepared baking pan to form the base.
  8. Sprinkle the chocolate chips evenly over the base layer.
  9. Crumble the remaining oatmeal mixture evenly over the chocolate chips.
  10. Bake for 25-30 minutes, or until the edges are golden brown and the center is set (a toothpick inserted near the center should come out with a few moist crumbs).
  11. Let cool completely in the pan before cutting into bars. Sprinkle with sea salt flakes (optional).
