Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) packed light brown sugar
  • 1/4 cup (50g) granulated white sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (45g) quick-cooking oats
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (1g) salt
  • 1 tsp (2g) ground cinnamon
  • 1 cup (140g) firmly squeezed shredded zucchini
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Grate the zucchini using the medium hole of a box grater. Place shreds into a clean kitchen towel and twist tightly, squeezing over the sink until no more water drips out.
  2. In a large bowl, beat the softened butter, brown sugar, and white sugar until smooth and pale. Add the egg and vanilla extract, beating for another 60 seconds until glossy.
  3. In a separate bowl, whisk together the flour, oats, baking soda, salt, and cinnamon. Gradually stir the dry mixture into the wet ingredients using a spatula until just combined.
  4. Fold in the squeezed shredded zucchini and semi-sweet chocolate chips until evenly distributed.
  5. Scoop dough onto baking sheets lined with parchment paper and bake for 10 minutes or until edges are caramelized and mahogany brown.
