Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • ½ cup (60g) brown sugar, packed
  • 2 large (110g) overripe bananas, mashed
  • 1 ½ cups (150g) grated zucchini, lightly squeezed
  • ½ cup (115g) unsalted butter, melted and cooled
  • 2 large (100g) eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Grate the zucchini using the medium hole of a box grater. Place shreds in a clean kitchen towel or paper towel and give it one gentle squeeze to remove excess moisture.
  2. Mash the bananas in a small bowl until smooth with only a few small lumps remaining.
  3. Preheat the oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  4. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and brown sugar.
  5. In a large bowl, whisk together the melted butter, eggs, mashed bananas, and vanilla extract until the mixture is a uniform golden color.
  6. Gently stir the grated zucchini into the wet mixture.
  7. Gradually add the dry ingredients in three additions, folding with a spatula just until the white streaks of flour disappear. Do not overmix.
  8. Toss the chocolate chips in a spoonful of the flour mixture, then fold them gently into the batter.
  9. Pour the batter into the prepared loaf pan and bake for 60 minutes or until a toothpick inserted in the center comes out clean.
