Ingredients:
- 1 cup (250g) creamy peanut butter
- 1/2 cup (60g) powdered sugar
- 1/4 teaspoon (1g) vanilla extract
- 1 cup (170g) semi-sweet chocolate chips
- 1 tablespoon (14g) coconut oil (optional)
Instructions:
- Line a baking sheet with parchment paper.
- In a bowl, combine peanut butter, powdered sugar, and vanilla until smooth.
- Using a spoon or cookie scoop, form small balls of the peanut butter mixture and place them on the lined baking sheet.
- Transfer the baking sheet to the refrigerator for about 20-30 minutes, or until firm.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in 20-second intervals, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate
- Place the dipped bites back on the parchment-lined sheet and chill again until the chocolate sets.
- Enjoy immediately or store in an airtight container in the fridge.
