Ingredients:

  • 1 cup (250g) creamy peanut butter
  • 1/2 cup (60g) powdered sugar
  • 1/4 teaspoon (1g) vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 tablespoon (14g) coconut oil (optional)

Instructions:

  1. Line a baking sheet with parchment paper.
  2. In a bowl, combine peanut butter, powdered sugar, and vanilla until smooth.
  3. Using a spoon or cookie scoop, form small balls of the peanut butter mixture and place them on the lined baking sheet.
  4. Transfer the baking sheet to the refrigerator for about 20-30 minutes, or until firm.
  5. In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in 20-second intervals, stirring until smooth.
  6. Dip each peanut butter ball into the melted chocolate
  7. Place the dipped bites back on the parchment-lined sheet and chill again until the chocolate sets.
  8. Enjoy immediately or store in an airtight container in the fridge.
