Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine oats, chopped nuts, cocoa powder, salt, and cinnamon.
  3. In a separate bowl, mix together peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix thoroughly.
  5. Spread the mixture onto a lined baking sheet, pressing it down lightly.
  6. Bake for 25-30 minutes, stirring halfway through, until golden brown and fragrant.
  7. Remove from the oven and let it cool completely on the baking sheet.
  8. Once cooled, stir in chocolate chips or dried fruits, if using.
  9. Store in an airtight container at room temperature for up to 2 weeks.
