  • 1/2 teaspoon vanilla extract (optional, for added flavor)

Instructions:

  1. Gather a baking sheet, parchment paper, a microwave-safe bowl or double boiler, and a spatula. Line the baking sheet with parchment paper to prevent sticking.
  2. Place the chocolate chips (and coconut oil if using) in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until smooth and fully melted (usually takes about 1-2 minutes).
  3. Add the raisins to the bowl and stir gently until each raisin is completely coated in chocolate.
  4. Using a fork or a slotted spoon, lift the chocolate-coated raisins out of the bowl and place them on the prepared baking sheet. Make sure they are spaced apart to avoid clumping.
  5. If desired, sprinkle a pinch of sea salt over the chocolate-covered raisins for a savory contrast.
  6. Allow the chocolate-covered raisins to sit at room temperature until the chocolate hardens, about 20-30 minutes. For quicker results, you can place them in the refrigerator for about 10-15 minutes.
  7. Once set, transfer the chocolate-covered raisins to an airtight container and store them in a cool, dry place or in the fridge for up to a week.
