Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (165g) packed light brown sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (120g) graham crackers, coarsely crushed
  • 1 cup (100g) mini marshmallows

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using your mixer on medium-high until the mixture looks pale and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients on low speed. Mix just until the white streaks of flour disappear—do not overmix.
  5. Using a spatula or wooden spoon, gently fold in the chocolate chips and crushed graham crackers.
  6. Carefully fold in the mini marshmallows so they don't break.
  7. Scoop rounded tablespoons of dough onto parchment-lined sheets, spacing them 2 inches apart.
  8. Bake for 10–12 minutes until edges are set but centers look slightly soft. Allow them to rest on the pan for 5 minutes before transferring to a wire rack.
