Ingredients:
- 1 sheet Ready-Rolled Puff Pastry (about 14.1 oz or 400g)
- 3/4 cup Whole Cranberry Sauce (thick, not runny)
- 1 Tbsp Orange Zest (from one large, unwaxed orange)
- 2 Tbsp packed Brown Sugar
- 1/2 tsp Ground Cinnamon
- 1/4 tsp Freshly Grated Nutmeg
- 1 Large Egg (for egg wash)
- 1 Tbsp Milk or Water (for egg wash)
- Flour (as needed, for dusting)
Instructions:
- Prepare the Filling and Egg Wash: In a small mixing bowl, combine the cranberry sauce, orange zest, brown sugar, cinnamon, and nutmeg. Stir until thoroughly mixed. In a separate small bowl, whisk the egg and milk (or water) together to create the egg wash. Set both aside.
- Unroll and Spread: Gently unroll the chilled puff pastry sheet onto a lightly floured work surface. Spread the cranberry mixture evenly across the pastry, ensuring you leave a clean 1-inch (2.5 cm) border along one of the long edges. This border will be used to seal the roll.
- Roll Tightly: Starting from the long edge opposite the clean border, roll the pastry tightly and evenly into a long, uniform cylinder. Use the parchment paper to help guide the roll.
- Seal and Chill: Brush the clean border edge with the prepared egg wash, then press firmly to seal the roll completely. Wrap the sealed log tightly in plastic wrap and chill in the freezer for 15 minutes, or in the refrigerator for 30–45 minutes. This step is non-negotiable for clean slicing.
- Preheat Oven and Slice: Preheat your oven to 400°F (200°C/Gas Mark 6). Line two baking sheets with fresh parchment paper. Remove the log from the fridge/freezer and unwrap it. Using a very sharp knife (or dental floss), slice the log into 3/4-inch (2 cm) thick rounds.
- Arrange and Wash: Place the pinwheels flat onto the prepared baking sheets, leaving about 1 inch (2.5 cm) of space between each. Brush the tops and sides of each pinwheel generously with the remaining egg wash for a lovely golden shine.
- Bake: Bake for 18–20 minutes, or until the pastry is deeply puffed, flaky, and beautifully golden brown.
- Cool: Transfer the pinwheels immediately to a wire rack to cool slightly. Serve warm, or enjoy at room temperature.
