Ingredients:

  • 1 cup (140g) raw cashews, soaked for 2 hours
  • 1/2 cup (75g) pitted Medjool dates
  • 2 tbsp (30ml) fresh lime juice
  • 1 tbsp (6g) organic lemon zest
  • 1 tbsp (16g) maple syrup
  • 1/4 tsp (1.5g) sea salt
  • 1/2 cup (50g) unsweetened shredded coconut
  • 1 tsp (5ml) lime zest
  • 1 tsp (5ml) lime juice

Instructions:

  1. Combine the soaked cashews, dates, lime juice, lemon zest, maple syrup, and salt in a food processor.
  2. Pulse in short bursts until the mixture transforms into a cohesive, velvety dough that pulls away from the sides of the bowl.
  3. Scoop approximately 1 tablespoon of the mixture and roll it between your palms to create a smooth, 1-inch ball.
  4. Toss the shredded coconut with lime zest and a tiny drizzle of lime juice in a small bowl.
  5. Roll each ball in the coconut mixture, pressing gently so the flakes adhere firmly.
  6. Place the bites on a parchment-lined tray and refrigerate for 30 minutes to set.
