- 2 tbsp (30ml) fresh lime juice
- 1 tbsp (6g) organic lemon zest
- 1 tbsp (16g) maple syrup
- 1/4 tsp (1.5g) sea salt
- 1/2 cup (50g) unsweetened shredded coconut
- 1 tsp (5ml) lime zest
- 1 tsp (5ml) lime juice
Instructions:
- Combine the soaked cashews, dates, lime juice, lemon zest, maple syrup, and salt in a food processor.
- Pulse in short bursts until the mixture transforms into a cohesive, velvety dough that pulls away from the sides of the bowl.
- Scoop approximately 1 tablespoon of the mixture and roll it between your palms to create a smooth, 1-inch ball.
- Toss the shredded coconut with lime zest and a tiny drizzle of lime juice in a small bowl.
- Roll each ball in the coconut mixture, pressing gently so the flakes adhere firmly.
- Place the bites on a parchment-lined tray and refrigerate for 30 minutes to set.
