- 3 tbsp (22g) all-purpose flour
- 3 large eggs, room temperature
- 2/3 cup (160ml) fresh lemon juice
- 1 tbsp freshly grated lemon zest
- 1 tbsp powdered sugar, for dusting
Instructions:
- Preheat and Prep: Set your oven to 350°F (175°C). Line your 8x8 pan with parchment, leaving an overhang on two sides like a handle.
- Mix the Base: In a medium bowl, stir together 1/2 cup melted butter, 1/4 cup sugar, vanilla, and salt.
- Incorporate Flour: Add 1 cup of all purpose flour. Stir until a soft dough forms and no white streaks remain.
- Press and Bake: Press the dough into the pan. Bake for 18-20 minutes until the edges are golden brown and the center looks dry.
- Aromatize Sugar: While the crust bakes, rub the lemon zest into the 1 cup of sugar in a large bowl.
- Build the Filling: Whisk in 3 tablespoons of flour, then add the 3 eggs and 2/3 cup lemon juice.
- Whisk for Smoothness: Whisk vigorously until the mixture is pale and completely smooth with no flour lumps.
- The Hot Pour: Pour the filling over the hot crust. Reduce oven to 325°F (160°C) immediately.
- The Second Bake: Bake for 22-25 minutes until the edges are set and the center barely wobbles when shaken.
- Cool and Chill: Cool at room temperature, then refrigerate for 2 hours. Note: Chilling is mandatory for clean cuts.
