Ingredients:
- 1 cup (240ml) good-quality mayonnaise
- 1/4 cup (60ml) ketchup
- 2 tablespoons fresh lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon brandy or cognac (optional)
- Salt and freshly ground black pepper to taste
Instructions:
- In the mixing bowl, whisk together the mayonnaise, ketchup, lemon juice, Worcestershire sauce, and brandy (if using) until well combined.
- Add the paprika and cayenne pepper (if using). Whisk again to incorporate.
- Season with salt and freshly ground black pepper to taste. Start with a pinch of each and adjust as needed.
- Cover the bowl with cling film (or reusable wrap) and refrigerate for at least 30 minutes to allow the flavours to meld together.
- Give the sauce a final whisk before serving.
