Ingredients:

  • 1 cup (240ml) good-quality mayonnaise
  • 1/4 cup (60ml) ketchup
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon brandy or cognac (optional)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. In the mixing bowl, whisk together the mayonnaise, ketchup, lemon juice, Worcestershire sauce, and brandy (if using) until well combined.
  2. Add the paprika and cayenne pepper (if using). Whisk again to incorporate.
  3. Season with salt and freshly ground black pepper to taste. Start with a pinch of each and adjust as needed.
  4. Cover the bowl with cling film (or reusable wrap) and refrigerate for at least 30 minutes to allow the flavours to meld together.
  5. Give the sauce a final whisk before serving.
