Ingredients:

  • 1 ¼ cups all-purpose flour
  • ½ tsp salt
  • ½ cup unsalted butter, chilled and cubed
  • 4-5 tbsp ice water
  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 5 strips of bacon, cooked and crumbled
  • ¼ tsp black pepper
  • ¼ tsp nutmeg
  • ½ tsp salt
  • Optional: 2 green onions, chopped

Instructions:

  1. Combine flour and salt in a bowl.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, until dough forms.
  4. Flatten into a disc, wrap in cling film, and chill for 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Roll out dough on a floured surface to fit the tart pan.
  7. Place dough in pan, trim edges, and chill.
  8. Line dough with parchment paper and add baking beans.
  9. Bake for 15 minutes, then remove weights and bake for an additional 5 minutes until lightly golden.
  10. In a mixing bowl, whisk eggs and cream until combined.
  11. Stir in cheese, crumbled bacon, salt, pepper, and nutmeg.
  12. Pour the filling into the pre-baked crust.
  13. Bake for 35-40 minutes until the center is set and lightly golden.
  14. Allow to cool for 5 minutes before slicing. Serve warm or at room temperature.
