Ingredients:
- 1 ¼ cups all-purpose flour
- ½ tsp salt
- ½ cup unsalted butter, chilled and cubed
- 4-5 tbsp ice water
- 6 large eggs
- 1 cup heavy cream
- 1 cup grated Gruyère cheese
- 5 strips of bacon, cooked and crumbled
- ¼ tsp black pepper
- ¼ tsp nutmeg
- ½ tsp salt
- Optional: 2 green onions, chopped
Instructions:
- Combine flour and salt in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, until dough forms.
- Flatten into a disc, wrap in cling film, and chill for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out dough on a floured surface to fit the tart pan.
- Place dough in pan, trim edges, and chill.
- Line dough with parchment paper and add baking beans.
- Bake for 15 minutes, then remove weights and bake for an additional 5 minutes until lightly golden.
- In a mixing bowl, whisk eggs and cream until combined.
- Stir in cheese, crumbled bacon, salt, pepper, and nutmeg.
- Pour the filling into the pre-baked crust.
- Bake for 35-40 minutes until the center is set and lightly golden.
- Allow to cool for 5 minutes before slicing. Serve warm or at room temperature.
