Ingredients:
- 1 cup (240 ml) full-fat coconut milk (canned, not carton refrigerated coconut milk), well-shaken
- 1/4 cup (40g) chia seeds
- 1 tablespoon maple syrup (or honey, agave, or other sweetener to taste)
- 1/2 teaspoon vanilla extract
- Pinch of sea salt
- Optional Toppings: Fresh fruit (berries, mango, banana), toasted coconut flakes, chopped nuts, chocolate shavings, seeds, a swirl of peanut butter
Instructions:
- In a jar or bowl, whisk together the coconut milk, chia seeds, maple syrup (or chosen sweetener), vanilla extract, and salt. Ensure the chia seeds are well-distributed.
- Let the mixture sit for 5 minutes.
- Whisk or stir vigorously again to break up any clumps of chia seeds.
- Cover the jar or bowl and refrigerate for at least 4 hours, or preferably overnight. This allows the chia seeds to fully absorb the liquid and create a pudding-like consistency.
- After chilling, check the consistency. If the pudding is too thick, add a splash of coconut milk to thin it out. If it's too thin, add a small amount of chia seeds (about 1 teaspoon) and chill for another hour.
- Spoon the chia seed pudding into bowls or glasses. Top with your favourite toppings. Enjoy!
