- 1/4 cup (40 g) chia seeds
- 2 tablespoons (30 ml) maple syrup or honey (adjust to taste)
- 1 teaspoon (5 ml) vanilla extract
- Pinch of salt
- Fresh fruit (e.g., mango, berries) for topping (optional)
- Toasted coconut flakes for topping (optional)
- Nuts or seeds (e.g., almonds, sunflower seeds) for topping (optional)
- A drizzle of additional maple syrup or honey for topping (optional)
Instructions:
- In a mixing bowl, whisk together coconut milk, chia seeds, maple syrup or honey, vanilla extract, and a pinch of salt until well combined.
- Allow the mixture to sit for 5 minutes to let the chia seeds absorb some liquid and expand. Stir again to prevent clumping.
- Pour the mixture into an airtight container or individual serving jars. Cover and refrigerate for at least 4 hours, or overnight for a thicker consistency.
- Once chilled, stir the pudding again, then top with your choice of fresh fruit, toasted coconut, or nuts before serving.
