  • 1/4 cup (40 g) chia seeds
  • 2 tablespoons (30 ml) maple syrup or honey (adjust to taste)
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of salt
  • Fresh fruit (e.g., mango, berries) for topping (optional)
  • Toasted coconut flakes for topping (optional)
  • Nuts or seeds (e.g., almonds, sunflower seeds) for topping (optional)
  • A drizzle of additional maple syrup or honey for topping (optional)

Instructions:

  1. In a mixing bowl, whisk together coconut milk, chia seeds, maple syrup or honey, vanilla extract, and a pinch of salt until well combined.
  2. Allow the mixture to sit for 5 minutes to let the chia seeds absorb some liquid and expand. Stir again to prevent clumping.
  3. Pour the mixture into an airtight container or individual serving jars. Cover and refrigerate for at least 4 hours, or overnight for a thicker consistency.
  4. Once chilled, stir the pudding again, then top with your choice of fresh fruit, toasted coconut, or nuts before serving.
