Ingredients:
- 6 large eggs
- 1/2 cup coconut oil, melted
- 1/2 cup unsweetened applesauce
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or blueberries (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.
- In a large bowl, whisk together the eggs, melted coconut oil, applesauce, honey, and vanilla extract until well combined.
- In a separate bowl, whisk together the coconut flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Batter will be thick.
- If using, gently fold in chocolate chips or blueberries.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
