Ingredients:

  • 6 large eggs
  • 1/2 cup coconut oil, melted
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the eggs, melted coconut oil, applesauce, honey, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the coconut flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Batter will be thick.
  5. If using, gently fold in chocolate chips or blueberries.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
