Ingredients:

  • 1/2 cup (60g) coconut flour
  • 1 tablespoon (12.5g) baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup (240ml) coconut milk
  • 2 tablespoons (30ml) honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30g) melted coconut oil or unsalted butter

Instructions:

  1. In a medium bowl, whisk together the coconut flour, baking powder, and salt until combined.
  2. In a separate bowl, beat the eggs, then add the coconut milk, honey, vanilla, and melted coconut oil. Whisk until fully integrated.
  3. Gradually add the dry mixture to the wet mixture. Stir until just combined; let it sit for 5 minutes to thicken.
  4. Preheat a non-stick skillet or griddle over medium heat; grease lightly if needed.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes until bubbles form on top and the edges look set.
  6. Flip pancakes and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter.
  7. Enjoy the pancakes immediately topped with your favorite fruits or syrup.
