Ingredients:
- 1/2 cup (60g) coconut flour
- 1 tablespoon (12.5g) baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup (240ml) coconut milk
- 2 tablespoons (30ml) honey or maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons (30g) melted coconut oil or unsalted butter
Instructions:
- In a medium bowl, whisk together the coconut flour, baking powder, and salt until combined.
- In a separate bowl, beat the eggs, then add the coconut milk, honey, vanilla, and melted coconut oil. Whisk until fully integrated.
- Gradually add the dry mixture to the wet mixture. Stir until just combined; let it sit for 5 minutes to thicken.
- Preheat a non-stick skillet or griddle over medium heat; grease lightly if needed.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook for about 2-3 minutes until bubbles form on top and the edges look set.
- Flip pancakes and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter.
