  • 1 tsp (5g) unsalted butter, softened
  • 1/2 cup (113g) low-fat cottage cheese
  • 1/4 tsp (1.5g) sea salt
  • 1/8 tsp (0.5g) cracked black pepper
  • 1/2 medium (75g) ripe avocado
  • 1 tsp (5ml) lemon juice
  • 1 tsp (5g) everything bagel seasoning
  • 1 tsp (5ml) hot honey

Instructions:

  1. Toast the sourdough slices until the edges are a deep golden brown and the center feels firm. If using a skillet, melt butter over medium heat and sear each side for 2 minutes.
  2. Mash the cottage cheese with a fork for a chunky texture, or pulse it in a mini-food processor for 30 seconds for a whipped consistency. Stir in the sea salt and cracked black pepper.
  3. Spread a generous layer of the cottage cheese mixture over the hot toast, ensuring it reaches the edges.
  4. Slice the avocado into thin ribbons and fan them across the cheese layer.
  5. Drizzle with lemon juice, sprinkle with everything bagel seasoning, and finish with a drizzle of hot honey.
