Ingredients:

  • 1 cup (225g) low-fat cottage cheese
  • 1/4 cup (60ml) unsweetened almond milk
  • 2 tbsp (24g) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 3 tbsp (36g) chia seeds
  • 1/4 tsp (1.5g) sea salt
  • 1/2 cup (75g) fresh blueberries
  • 1 tbsp (10g) sliced almonds
  • 1 tsp (5g) hemp hearts

Instructions:

  1. Place the cottage cheese, almond milk, maple syrup, and vanilla extract into a high-speed blender or food processor. Process on high for 30–60 seconds until the mixture is completely smooth and no curds remain.
  2. Pour the blended mixture into a mixing bowl or directly into two 8 oz mason jars. Add the chia seeds and sea salt, stirring vigorously with a spoon or whisk to ensure the seeds are evenly distributed.
  3. Seal the jars tightly and refrigerate for at least 4 hours, or overnight, to allow the chia seeds to hydrate and thicken the pudding.
  4. Before serving, give the pudding one final stir and top with fresh blueberries, sliced almonds, and hemp hearts.
