Ingredients:
- 1 cup (200g) fresh or frozen cranberries
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60ml) water
- 1 tablespoon orange zest, finely grated
- 1 sheet (14.1 oz / 400g) frozen puff pastry, thawed in the fridge
- 8 ounces (225g) brie cheese, rind removed, cut into 24 small cubes
- 1 large egg, beaten (for egg wash)
- Optional: Chopped pecans or walnuts, for garnish
- Optional: Drizzle of honey, for serving
Instructions:
- Combine cranberries, sugar, water, and orange zest in a saucepan. Bring to a boil, then reduce heat and simmer until cranberries burst and sauce thickens (about 10 minutes). Remove from heat and let cool completely.
- Unfold thawed puff pastry sheet on a lightly floured surface. Gently roll out slightly to even thickness. Cut the puff pastry into 24 equal squares (6x4 grid). Chill the squares for 15 minutes to keep cold before assembling.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Place pastry squares on the prepared baking sheet. Top each square with a cube of brie cheese and a teaspoon of cranberry sauce.
- Brush the edges of the pastry with egg wash. Sprinkle with chopped nuts, if using. Bake for 15-20 minutes, or until pastry is golden brown and brie is melted and slightly bubbly.
- Let the bites cool slightly on the baking sheet before transferring to a serving platter. Drizzle with honey, if desired. Serve warm.
