Ingredients:
- 1 cup (225g) unsalted butter, softened to room temperature
- 3/4 cup (150g) granulated sugar
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 tbsp (6g) fresh orange zest
- 2 1/4 cups (280g) all-purpose flour
- 2 tbsp (16g) cornstarch
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 1/2 cup (60g) dried cranberries, finely chopped
- 2 tbsp (16g) granulated sugar (for finishing)
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Place the granulated sugar in a bowl and use your fingertips to pinch and rub the orange zest into the sugar for 2-3 minutes until fragrant and slightly damp.
- In a stand mixer with a paddle attachment, beat the softened butter and the infused sugar on medium-high speed for 3-5 minutes until pale, fluffy, and doubled in volume.
- Beat in the egg and vanilla extract until fully incorporated and smooth.
- Sift together the all-purpose flour, cornstarch, baking powder, and salt. Turn the mixer to the lowest setting and slowly add the dry ingredients, mixing only until just combined.
- Fold in the finely chopped dried cranberries.
- Chill the dough in the refrigerator for 30 minutes to firm up the fats.
- Preheat oven and prepare baking sheets with parchment paper. Scoop dough into balls, and optionally roll them in a mixture of granulated sugar and ground cinnamon.
- Bake for 10 minutes or until the edges are lightly golden. Transfer to a wire cooling rack.
