Ingredients:
- 1/4 cup (40g) chia seeds
- 1 cup (240ml) coconut milk
- 1 tbsp (15ml) maple syrup
- 1/2 tsp (2.5ml) vanilla extract
- 1 pinch (0.5g) sea salt
- 1/2 cup (75g) fresh blueberries
- 1 tbsp (15g) sliced almonds
- 1 tsp (5g) shredded coconut
Instructions:
- In a medium mixing bowl or directly in two glass jars, combine the chia seeds, coconut milk, maple syrup, vanilla extract, and salt.
- Whisk vigorously for about 60 seconds until the seeds are fully suspended in the liquid.
- Let the mixture sit on the counter for 5 to 10 minutes to allow the seeds to begin swelling.
- Stir the mixture again to break up any seed clusters and ensure a uniform texture.
- Seal the jars with lids and refrigerate for at least 4 hours, or overnight for a thicker consistency.
- Stir the pudding one last time before serving and top with fresh blueberries, sliced almonds, and shredded coconut.
