Ingredients:

  • 5 Tablespoons (71g) unsalted butter, softened to room temperature
  • 1 cup (250g) creamy peanut butter (such as Skippy or Jif)
  • 1 cup (120g) confectioners' sugar, sifted
  • 1/3 cup (80ml) heavy cream, at room temperature
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon fine sea salt

Instructions:

  1. In a mixing bowl, beat the softened butter with an electric mixer on medium speed until light and creamy (about 2 minutes).
  2. With the mixer running on low speed, add the peanut butter, sifted confectioners' sugar, heavy cream, vanilla extract, and salt to the bowl.
  3. Increase the mixer speed to high and beat for 3 full minutes.
  4. If the frosting is too thick, add 1 tablespoon of heavy cream at a time until desired consistency is reached. If the frosting is too thin, add up to 1/4 cup of sifted confectioners’ sugar, 1 tablespoon at a time, until the desired consistency is reached.
  5. Give it a taste! Adjust for sweetness or saltiness as needed.
  6. Frost immediately or store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature before using.
