Ingredients:
- 1 cup (240g) plain Greek yogurt
- 3 tbsp (30g) chia seeds
- 1 tbsp (15ml) maple syrup
- 1/2 tsp (2.5ml) vanilla extract
- 1/4 tsp (1.25g) ground cinnamon
- 1 cup (150g) fresh berries
- 1/2 cup (60g) low-sugar granola
- 1 tbsp (15g) sliced almonds
Instructions:
- In a small mixing bowl, combine the Greek yogurt, chia seeds, maple syrup, vanilla, and cinnamon. Whisk vigorously for about 60 seconds until the mixture is completely uniform and no dry clumps of chia seeds remain. Let it sit for 5 minutes.
- Spoon half of the chia yogurt mixture into the bottom of each mason jar, smoothing the top with the back of a spoon. Add a layer of fresh berries over the yogurt.
- Repeat the process by adding the remaining yogurt followed by the remaining fruit.
- Seal the jars and place them in the refrigerator for at least 2 hours (or overnight).
- Just before serving, top each parfait with a layer of granola and sliced almonds.
