Ingredients:

  • 2 medium zucchini (about 500g / 1.1 lbs)
  • ½ cup all-purpose flour (60g / 2.1 oz)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (50g / 1.8 oz)
  • ¼ cup grated Parmesan cheese (25g / 0.9 oz)
  • 1 teaspoon garlic powder (5 ml)
  • 1 teaspoon dried oregano (5 ml)
  • ½ teaspoon salt (2.5 ml)
  • ¼ teaspoon black pepper (1.25 ml)
  • 2 tablespoons olive oil (30 ml)
  • ½ cup mayonnaise (120 ml)
  • 1 tablespoon sriracha sauce (15 ml)
  • 1 clove garlic, minced (approx. 1/2 teaspoon)
  • 1 teaspoon lemon juice (5 ml)
  • ¼ teaspoon smoked paprika (1.25 ml)

Instructions:

  1. Wash and trim the zucchini. Cut them into fries, about ½-inch thick.
  2. Place flour in one shallow dish, beaten eggs in another, and panko mixture (panko, Parmesan, garlic powder, oregano, salt, pepper) in the third.
  3. Dredge each zucchini fry in flour, dip in egg, then coat thoroughly in the panko mixture, pressing gently to adhere.
  4. Preheat air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray.
  5. Arrange zucchini fries in a single layer in the air fryer basket (work in batches if necessary). Drizzle with olive oil.
  6. Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  7. While the fries are cooking, combine all aioli ingredients in a small bowl. Whisk until smooth.
