Ingredients:
- 2 medium zucchini (about 500g / 1.1 lbs)
- ½ cup all-purpose flour (60g / 2.1 oz)
- 2 large eggs, beaten
- 1 cup panko breadcrumbs (50g / 1.8 oz)
- ¼ cup grated Parmesan cheese (25g / 0.9 oz)
- 1 teaspoon garlic powder (5 ml)
- 1 teaspoon dried oregano (5 ml)
- ½ teaspoon salt (2.5 ml)
- ¼ teaspoon black pepper (1.25 ml)
- 2 tablespoons olive oil (30 ml)
- ½ cup mayonnaise (120 ml)
- 1 tablespoon sriracha sauce (15 ml)
- 1 clove garlic, minced (approx. 1/2 teaspoon)
- 1 teaspoon lemon juice (5 ml)
- ¼ teaspoon smoked paprika (1.25 ml)
Instructions:
- Wash and trim the zucchini. Cut them into fries, about ½-inch thick.
- Place flour in one shallow dish, beaten eggs in another, and panko mixture (panko, Parmesan, garlic powder, oregano, salt, pepper) in the third.
- Dredge each zucchini fry in flour, dip in egg, then coat thoroughly in the panko mixture, pressing gently to adhere.
- Preheat air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray.
- Arrange zucchini fries in a single layer in the air fryer basket (work in batches if necessary). Drizzle with olive oil.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- While the fries are cooking, combine all aioli ingredients in a small bowl. Whisk until smooth.
