Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • 1 cup (100 g) all-purpose flour
  • 2 large eggs
  • 1 cup (100 g) breadcrumbs (preferably Italian style)
  • 1 tsp (5 g) garlic powder
  • 1 tsp (5 g) dried oregano
  • Salt and pepper, to taste
  • 2 cups (480 ml) marinara sauce
  • 1 cup (120 g) shredded mozzarella cheese
  • 1/2 cup (50 g) grated parmesan cheese
  • Fresh basil leaves, for garnish
  • Crushed red pepper flakes (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Use a meat mallet to pound the chicken breasts to an even thickness (about 1 inch). Season both sides with salt and pepper.
  3. Place flour in the first bowl. Whisk eggs in the second bowl. Mix breadcrumbs, garlic powder, oregano, salt, and pepper in the third bowl.
  4. Dredge each breast in flour, dip it in the egg, then coat it with the breadcrumb mixture. Transfer breaded chicken to the prepared baking sheet and chill for 15 minutes.
  5. Bake in the preheated oven for 25 minutes or until golden brown and internal temperature reaches 165°F (75°C).
  6. Remove chicken from the oven, spoon marinara sauce over each piece, and sprinkle with mozzarella and parmesan.
  7. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Top with fresh basil and optional red pepper flakes before serving.
