Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
- 1 cup (100 g) all-purpose flour
- 2 large eggs
- 1 cup (100 g) breadcrumbs (preferably Italian style)
- 1 tsp (5 g) garlic powder
- 1 tsp (5 g) dried oregano
- Salt and pepper, to taste
- 2 cups (480 ml) marinara sauce
- 1 cup (120 g) shredded mozzarella cheese
- 1/2 cup (50 g) grated parmesan cheese
- Fresh basil leaves, for garnish
- Crushed red pepper flakes (optional)
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Use a meat mallet to pound the chicken breasts to an even thickness (about 1 inch). Season both sides with salt and pepper.
- Place flour in the first bowl. Whisk eggs in the second bowl. Mix breadcrumbs, garlic powder, oregano, salt, and pepper in the third bowl.
- Dredge each breast in flour, dip it in the egg, then coat it with the breadcrumb mixture. Transfer breaded chicken to the prepared baking sheet and chill for 15 minutes.
- Bake in the preheated oven for 25 minutes or until golden brown and internal temperature reaches 165°F (75°C).
- Remove chicken from the oven, spoon marinara sauce over each piece, and sprinkle with mozzarella and parmesan.
- Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
- Top with fresh basil and optional red pepper flakes before serving.
