Ingredients:
- 4 (6-ounce) cod fillets (170 g each)
- ½ cup all-purpose flour (60 g)
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 2 large eggs, beaten
- 1 cup panko breadcrumbs (100 g)
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
- Zest of 1 lemon
- 2 tablespoons olive oil (30 ml)
Instructions:
- Preheat your oven to 425°F (220°C).
- Pat cod fillets dry with paper towels and season both sides with salt and pepper.
- In one shallow bowl, combine flour, garlic powder, smoked paprika, salt, and pepper.
- In a second bowl, place the beaten eggs.
- In a third bowl, mix panko breadcrumbs, parsley, and lemon zest.
- Dredge each fillet in the flour mixture, shaking off excess.
- Dip into the beaten eggs, then coat with the panko mixture, pressing gently to adhere.
- Line a baking sheet with parchment paper or grease lightly with olive oil.
- Place coated cod on the baking sheet and drizzle with remaining olive oil.
- Bake for 15-20 minutes until the cod is golden brown and flakes easily with a fork (or reaches an internal temperature of 145°F or 63°C).
- Remove from the oven and let rest for a minute before serving.
