Ingredients:

  • 4 (6-ounce) cod fillets (170 g each)
  • ½ cup all-purpose flour (60 g)
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (100 g)
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • Zest of 1 lemon
  • 2 tablespoons olive oil (30 ml)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Pat cod fillets dry with paper towels and season both sides with salt and pepper.
  3. In one shallow bowl, combine flour, garlic powder, smoked paprika, salt, and pepper.
  4. In a second bowl, place the beaten eggs.
  5. In a third bowl, mix panko breadcrumbs, parsley, and lemon zest.
  6. Dredge each fillet in the flour mixture, shaking off excess.
  7. Dip into the beaten eggs, then coat with the panko mixture, pressing gently to adhere.
  8. Line a baking sheet with parchment paper or grease lightly with olive oil.
  9. Place coated cod on the baking sheet and drizzle with remaining olive oil.
  10. Bake for 15-20 minutes until the cod is golden brown and flakes easily with a fork (or reaches an internal temperature of 145°F or 63°C).
  11. Remove from the oven and let rest for a minute before serving.
