Ingredients:
- 4 haddock fillets (about 6 oz each or 170 g)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 and ½ cups crushed Ritz crackers (approximately 1 sleeve)
- 4 tablespoons unsalted butter, melted
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)
- ½ teaspoon dried thyme (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Pat haddock fillets dry with paper towels. Drizzle with olive oil, and season with garlic powder, paprika, salt, and pepper.
- In a mixing bowl, combine crushed Ritz crackers, melted butter, lemon juice, parsley, and thyme. Stir until well mixed and crumbly.
- Arrange seasoned haddock in a greased baking dish. Evenly sprinkle cracker topping over the fillets.
- Bake in the preheated oven for 20-25 minutes or until haddock is opaque and flakes easily with a fork, and the topping is golden brown.
- Let rest for 5 minutes before serving.
