Ingredients:

  • 4 haddock fillets (about 6 oz each or 170 g)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 and ½ cups crushed Ritz crackers (approximately 1 sleeve)
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)
  • ½ teaspoon dried thyme (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Pat haddock fillets dry with paper towels. Drizzle with olive oil, and season with garlic powder, paprika, salt, and pepper.
  3. In a mixing bowl, combine crushed Ritz crackers, melted butter, lemon juice, parsley, and thyme. Stir until well mixed and crumbly.
  4. Arrange seasoned haddock in a greased baking dish. Evenly sprinkle cracker topping over the fillets.
  5. Bake in the preheated oven for 20-25 minutes or until haddock is opaque and flakes easily with a fork, and the topping is golden brown.
  6. Let rest for 5 minutes before serving.
