Instructions:
- Preheat the oven to 425°F (220°C).
- Wash and peel the potatoes, then cut them into even strips (about ¼- to ½-inch thick).
- Place cut potatoes into a large bowl and cover with cold water. Soak for 10-15 minutes for extra crispiness.
- Drain and pat the potatoes dry with a kitchen towel.
- Drizzle olive oil over the dried potato strips; toss to coat.
- Add garlic powder, smoked paprika, sea salt, and black pepper; toss again until evenly coated.
- Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper.
- Bake for 30-35 minutes, turning halfway through, until golden brown and crispy.
- Remove from the oven and let cool slightly before serving; garnish with parsley if desired.
