Ingredients:
- 2 medium zucchini (about 1 lb / 450g), cut into 3-inch fries
- 1 teaspoon kosher salt (6g)
- 1/2 cup all-purpose flour (60g)
- 2 large eggs, lightly beaten
- 1 cup panko breadcrumbs (55g)
- 1/2 cup grated Parmesan cheese (50g)
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Cooking spray
- 1/2 cup mayonnaise (120ml)
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Salt the zucchini fries in a colander to draw out excess moisture. Let sit for 30 minutes, then pat dry very thoroughly.
- In three separate shallow bowls, place the flour, beaten eggs, and a mixture of panko breadcrumbs, parmesan cheese, Italian seasoning, garlic powder, and pepper.
- Dredge each zucchini fry in flour, then dip in egg, and finally coat thoroughly in the panko-parmesan mixture.
- Place the breaded zucchini fries on a baking sheet lined with parchment paper or a silicone mat. Drizzle with olive oil.
- Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- While the fries are baking, whisk together the mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl.
- Serve the baked zucchini fries immediately with the garlic aioli for dipping.
