Ingredients:
- 1.5 lbs center-cut salmon fillets, skin removed and cut into 1-inch cubes
- 1 tbsp avocado oil
- 2 tbsp cornstarch
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/4 cup avocado oil mayonnaise
- 2 tbsp plain Greek yogurt
- 1/3 cup Thai sweet chili sauce
- 1.5 tbsp sriracha
- 1 tsp rice vinegar
Instructions:
- Pat the salmon cubes completely dry with paper towels to ensure a crispy crust. In a large bowl, toss the salmon with 1 tbsp of avocado oil.
- In a small container, whisk together the cornstarch, smoked paprika, garlic powder, onion powder, salt, and black pepper. Sprinkle the mixture over the salmon and toss until evenly coated.
- Preheat the air fryer to 400°F (200°C). Arrange salmon cubes in a single layer, ensuring they do not touch. Air fry for 8 minutes until the exterior is golden and the surface looks crackled.
- While the salmon cooks, whisk together the mayonnaise, Greek yogurt, sweet chili sauce, sriracha, and rice vinegar in a small bowl.
- Transfer the hot salmon cubes to a clean bowl, drizzle with the sauce, and toss gently to coat immediately before serving.
