Ingredients:

  • 1.5 lbs center-cut salmon fillets, skin removed and cut into 1-inch cubes
  • 1 tbsp avocado oil
  • 2 tbsp cornstarch
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/4 cup avocado oil mayonnaise
  • 2 tbsp plain Greek yogurt
  • 1/3 cup Thai sweet chili sauce
  • 1.5 tbsp sriracha
  • 1 tsp rice vinegar

Instructions:

  1. Pat the salmon cubes completely dry with paper towels to ensure a crispy crust. In a large bowl, toss the salmon with 1 tbsp of avocado oil.
  2. In a small container, whisk together the cornstarch, smoked paprika, garlic powder, onion powder, salt, and black pepper. Sprinkle the mixture over the salmon and toss until evenly coated.
  3. Preheat the air fryer to 400°F (200°C). Arrange salmon cubes in a single layer, ensuring they do not touch. Air fry for 8 minutes until the exterior is golden and the surface looks crackled.
  4. While the salmon cooks, whisk together the mayonnaise, Greek yogurt, sweet chili sauce, sriracha, and rice vinegar in a small bowl.
  5. Transfer the hot salmon cubes to a clean bowl, drizzle with the sauce, and toss gently to coat immediately before serving.
