Ingredients:

  • 1 lb (450g) Ground Beef (80/20 blend)
  • Salt and Freshly Ground Black Pepper, to taste
  • 2 tbsp Butter or Neutral Oil
  • 2 Large Flour Tortillas (Burrito size, approx. 10-inch/25cm)
  • 4 slices American or Cheddar Cheese
  • 8–10 Dill Pickle Slices
  • 2 tbsp Diced White Onion (optional)
  • 3 tbsp Mayonnaise
  • 1 tbsp Ketchup
  • 1 tsp Yellow Mustard
  • 1 tsp Sweet Pickle Relish
  • Pinch of Smoked Paprika

Instructions:

  1. Whisk together all the 'Secret Sauce' ingredients (mayonnaise, ketchup, mustard, relish, smoked paprika) in a small bowl until thoroughly combined. Set aside.
  2. Divide the ground beef into two equal portions. Gently shape into thin patties, slightly wider than the tortillas, as they will shrink. Season generously on both sides with salt and pepper.
  3. Heat the large skillet over medium-high heat with half the butter/oil. Sear the patties for 3–4 minutes per side for medium doneness. If using diced onion, add it during the last minute of cooking the first side.
  4. In the final minute of cooking, top each patty with two slices of cheese. Cover the pan briefly or add a splash of water and cover to create steam, ensuring the cheese melts beautifully. Remove patties and keep warm.
  5. Lay one warm tortilla flat. Spread a generous layer of Secret Sauce across the centre third. Layer a cheese-topped patty on one half, followed by pickle slices.
  6. Fold in the sides of the tortilla, then tightly roll from the bottom up, creating a tight burrito shape. Repeat for the second wrap.
  7. Heat the remaining butter/oil in the medium non-stick skillet over medium heat. Place the assembled wraps seam-side down in the hot pan.
  8. Cook for 2–3 minutes per side, pressing gently with a spatula, until the tortilla is deep golden brown and delightfully crisp. Slice on the diagonal and serve immediately with extra sauce for dipping.
