Ingredients:

  • 1 large head cauliflower (about 900g / 2 lbs), cut into bite-sized florets
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon chipotle powder (15 ml)
  • 1 teaspoon ground cumin (5 ml)
  • 1/2 teaspoon smoked paprika (2.5 ml)
  • 1/2 teaspoon garlic powder (2.5 ml)
  • 1/4 teaspoon salt (1.25 ml)
  • 1/4 teaspoon black pepper (1.25 ml)
  • 1/2 cup sour cream (120 ml)
  • 2 tablespoons mayonnaise (30 ml)
  • Zest and juice of 1 lime
  • 1/4 teaspoon salt (1.25 ml)
  • 8-12 small corn or flour tortillas
  • Optional toppings: shredded cabbage, chopped cilantro, sliced avocado, pickled onions, salsa

Instructions:

  1. Preheat oven to 400°F (200°C). Toss cauliflower florets with olive oil, chipotle powder, cumin, smoked paprika, garlic powder, salt, and pepper in a large bowl until evenly coated.
  2. Spread the seasoned cauliflower in a single layer on a baking sheet (lined with parchment paper, if desired). Roast for 25-30 minutes, flipping halfway through, until tender and slightly charred around the edges.
  3. While the cauliflower roasts, whisk together sour cream, mayonnaise, lime zest, lime juice, and salt in a small bowl. Set aside the Lime Crema.
  4. Warm tortillas according to package directions. (Oven, skillet, or microwave are all fine options).
  5. Fill each tortilla with roasted chipotle cauliflower, a dollop of lime crema, and your desired toppings to assemble your Cauliflower Tacos.
