Ingredients:

  • 2 cups fresh corn kernels (or canned corn, drained)
  • 1 cup all-purpose flour
  • 1 large egg
  • 1/2 cup milk
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 2 tablespoons chopped fresh herbs (like parsley or cilantro)
  • Vegetable oil for frying
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions:

  1. In a large mixing bowl, combine corn, flour, egg, milk, baking powder, salt, pepper, and smoked paprika. Add chopped herbs and mix until just combined.
  2. Cover the bowl with plastic wrap and chill in the refrigerator for about 30 minutes.
  3. In a separate bowl, mix Greek yogurt, lemon juice, minced garlic, salt, and pepper until smooth. Adjust seasoning to taste.
  4. In a frying pan, pour enough vegetable oil to cover the bottom, about 1/4 inch deep. Heat over medium-high until hot.
  5. Using a spoon or a small ice cream scoop, drop spoonfuls of the mixture into the hot oil. Cook for about 3-4 minutes per side or until golden brown.
  6. Remove fritters with a slotted spoon and let them drain on paper towels. Serve warm with Greek yogurt sauce.
