Ingredients:
- 2 cups fresh corn kernels (or canned corn, drained)
- 1 cup all-purpose flour
- 1 large egg
- 1/2 cup milk
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
- 2 tablespoons chopped fresh herbs (like parsley or cilantro)
- Vegetable oil for frying
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions:
- In a large mixing bowl, combine corn, flour, egg, milk, baking powder, salt, pepper, and smoked paprika. Add chopped herbs and mix until just combined.
- Cover the bowl with plastic wrap and chill in the refrigerator for about 30 minutes.
- In a separate bowl, mix Greek yogurt, lemon juice, minced garlic, salt, and pepper until smooth. Adjust seasoning to taste.
- In a frying pan, pour enough vegetable oil to cover the bottom, about 1/4 inch deep. Heat over medium-high until hot.
- Using a spoon or a small ice cream scoop, drop spoonfuls of the mixture into the hot oil. Cook for about 3-4 minutes per side or until golden brown.
- Remove fritters with a slotted spoon and let them drain on paper towels. Serve warm with Greek yogurt sauce.
