Ingredients:
- 1.5 lb (680g) broccolini, trimmed
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup (25g) grated Parmesan cheese
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and thoroughly dry the broccolini. Trim the ends if needed.
- In a large bowl, toss the broccolini with olive oil, minced garlic, red pepper flakes (if using), salt, and pepper. Ensure broccolini is evenly coated.
- Spread the broccolini in a single layer on the prepared baking sheet. Avoid overcrowding.
- Roast in the preheated oven for 15-20 minutes, or until the broccolini is tender-crisp and slightly browned.
- Remove from oven and sprinkle with grated Parmesan cheese.
- For extra browning, broil for 1-2 minutes, watching carefully to prevent burning (optional).
- Serve hot.
