Ingredients:

  • 1.5 lb (680g) broccolini, trimmed
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup (25g) grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and thoroughly dry the broccolini. Trim the ends if needed.
  3. In a large bowl, toss the broccolini with olive oil, minced garlic, red pepper flakes (if using), salt, and pepper. Ensure broccolini is evenly coated.
  4. Spread the broccolini in a single layer on the prepared baking sheet. Avoid overcrowding.
  5. Roast in the preheated oven for 15-20 minutes, or until the broccolini is tender-crisp and slightly browned.
  6. Remove from oven and sprinkle with grated Parmesan cheese.
  7. For extra browning, broil for 1-2 minutes, watching carefully to prevent burning (optional).
  8. Serve hot.
