Ingredients:

  • 4 Chicken Legs (about 1.5-2 lbs / 680-900g total)
  • 2 tablespoons Olive Oil (30 ml)
  • 1 tablespoon Dried Thyme (3g)
  • 1 tablespoon Dried Rosemary (3g)
  • 1 teaspoon Garlic Powder (3g)
  • 1/2 teaspoon Onion Powder (1.5g)
  • 1 teaspoon Paprika (sweet or smoked, 3g)
  • 1 teaspoon Salt (5g)
  • 1/2 teaspoon Black Pepper (2.5g)

Instructions:

  1. Prep the Chicken: Pat chicken legs dry with paper towels. This is key for crispy skin.
  2. Mix the Herb Rub: In a small bowl, combine olive oil, thyme, rosemary, garlic powder, onion powder, paprika, salt, and pepper.
  3. Rub the Chicken: Generously rub the herb mixture all over the chicken legs, ensuring they are evenly coated.
  4. Preheat Oven: Preheat oven to 400°F (200°C).
  5. Arrange on Baking Sheet: Line a baking sheet with foil (optional). Arrange chicken legs on the baking sheet, making sure they are not overcrowded.
  6. Bake: Bake for 40-50 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part of the thigh, away from the bone. This will show you how long to bake chicken.
  7. Crisp the Skin (Optional): For extra crispy skin, broil for the last 2-3 minutes, watching carefully to prevent burning.
