Ingredients:
- 2 (6-ounce) cod fillets (170g)
- 1/2 cup all-purpose flour (60g)
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (30ml)
- 1 tablespoon unsalted butter (14g)
- 4 tablespoons unsalted butter, softened (56g)
- Zest of 1 lemon
- Juice of 1/2 lemon
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh dill, chopped
- Salt and pepper to taste
Instructions:
- Pat cod fillets dry with paper towels and season with salt and pepper.
- In a shallow dish, combine flour, paprika, salt, and pepper.
- Coat each fillet in the flour mixture, shaking off excess.
- Heat olive oil in the skillet over medium-high heat. Add cod fillets and cook for 3-4 minutes per side until golden brown and cooked through.
- In a bowl, mix softened butter, lemon zest, lemon juice, parsley, dill, salt, and pepper until combined.
- Plate the cod and top with a generous dollop of lemon herb butter.
