Ingredients:

  • 2 (6-ounce) cod fillets (170g)
  • 1/2 cup all-purpose flour (60g)
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (30ml)
  • 1 tablespoon unsalted butter (14g)
  • 4 tablespoons unsalted butter, softened (56g)
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. Pat cod fillets dry with paper towels and season with salt and pepper.
  2. In a shallow dish, combine flour, paprika, salt, and pepper.
  3. Coat each fillet in the flour mixture, shaking off excess.
  4. Heat olive oil in the skillet over medium-high heat. Add cod fillets and cook for 3-4 minutes per side until golden brown and cooked through.
  5. In a bowl, mix softened butter, lemon zest, lemon juice, parsley, dill, salt, and pepper until combined.
  6. Plate the cod and top with a generous dollop of lemon herb butter.
